Recipe of the Week- Lemon Chickpea Salad

This week’s recipe is quick and easy – perfect for a busy summer weekend. 


  • 3 cups cooked chickpeas
  • 1 1/2 cups finely chopped cucumbers
  • Juice and zest of one lemon
  • 1/4 cup olive oil
  • 1/4 cup finely chopped dill
  • 1/4 tsp salt


  1. Place the chickpeas and chopped cucumbers into a bowl. 
  2. In a smaller bowl, whisk the lemon juice, lemon zest, olive oil, dill, and salt.
  3. Add the dressing to the chickpeas/cucumbers and mix well.
